Ingredients


  • 1 1/2 cups all-purpose flour

  • 1 cup whole wheat flour

  • 1/2 cup packed brown sugar

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, chilled and cut into small pieces

  • 1/4 cup honey

  • 1/4 cup milk

  • 1 teaspoon pure vanilla extract



Directions


In a large bowl, combine 1 ½ cups all-purpose flour, 1 cup whole wheat flour, ½ cup brown sugar, 1 teaspoon baking soda, and ½ teaspoon each of salt and cinnamon. Stir until well-blended.


Add the small pieces of the chilled ½ cup of butter to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the mixture until it resembles coarse crumbs. This can also be done using a food processor on pulse mode.


In a separate small bowl, whisk together ¼ cup honey, ¼ cup milk, and 1 teaspoon vanilla extract.


Gradually add the wet mixture to the dry ingredients. Stir until the dough comes together. If the dough is too dry, add a little more milk, one tablespoon at a time.


Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.


While the dough is chilling, preheat oven to 350°F and line baking sheets with parchment paper.


On a lightly floured surface, roll out the dough to approximately 1/8-inch thickness. Make sure it's even for consistent baking.


Use a knife or a cookie cutter to cut the dough into rectangles or the desired shape. Transfer the pieces to the prepared baking sheets.


Use a fork to prick the surface of each cracker to prevent them from puffing up during baking.


Place the baking sheets in the preheated oven and bake for approximately 10-12 minutes or until the edges are lightly browned.


Remove the crackers from the oven and let them cool on a wire rack. They will continue to crisp up as they cool.
