  • 3 Tablespoons unsalted butter

  • 1 Tablespoon bacon fat

  • ¼ cup all-purpose flour

  • 2 cups whole milk

  • ¼ teaspoon salt

  • ¼ teaspoon freshly ground black pepper

  • ¼ teaspoon crushed red pepper flakes



Directions


In a medium saucepan, melt 3 Tablespoons of butter and 1 Tablespoon bacon fat over medium heat. Be careful not to let it brown.


Add ¼ cup all-purpose flour to the melted butter, whisking constantly. Cook the mixture for approximately 2-3 minutes until it turns a golden-brown color. This is your roux, which acts as the thickening agent for the gravy.


Slowly pour in 2 cups of whole milk while continuing to whisk. This will help prevent lumps from forming. Keep whisking until the mixture is smooth.


Add ¼ teaspoon each of salt, fresh ground pepper, and crushed red pepper. Taste for seasoning preferences and adjust as needed.


Continue to cook the mixture over medium-low heat, whisking frequently, until it thickens to your desired consistency. This usually takes approximately 5 to 8 minutes. If the gravy becomes too thick, you can add a little more milk to reach the preferred consistency.


Once the gravy is thick and smooth, remove it from the heat. Serve hot.
