Helpful Tips
Sourdough. Discard or active is fine. If using discard, you want it to be at room temperature.) You’ll want approximately 100 grams or 1 cup.
Cheese. I always recommend shredding the cheese yourself rather than purchasing pre-shredded. Freshly shredded melts better because it doesn’t have the additional preservatives that keep it from caking together.
Uniformity. Use a 1-inch cookie scoop to make the sausage balls all the same size. This will ensure even baking.

1-pound spicy breakfast sausage, uncooked
2 cups shredded pepper jack cheese
1 cup sourdough starter

Directions
Preheat oven to 375°F and line a baking sheet with parchment paper.
In a large bowl, combine the 1 pound of uncooked spicy breakfast sausage, 2 cups shredded Pepper jack cheese, and 1 cup of sourdough starter. Next, add ½ cup all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of dried parsley, 1 teaspoon of salt, and ½ teaspoon each of ground black pepper, garlic powder, and onion powder. Mix with your hands until well combined. The dough should be sticky but hold together.
To ensure uniformity and even baking, use a 1-inch cookie scoop to shape the mixture into small balls. Place them on the prepared baking sheet, leaving some space between each ball.
Bake in the preheated oven for approximately 20-22 minutes or until the cheese balls are golden brown and cooked through.
Allow the sausage cheese balls to cool slightly on the baking sheet before transferring them to a serving platter.
